My Life Just Isn’t Fair!
November 24th, 2010Yes, really, my life just isn’t fair… in an amazing way.
As you probably know by now, I am a serious BBQ fan. Good ‘que is very special to me. Besides, with all the other countless blessings, such as family and friends, health, daily provisions, and the amazing gift of Jesus Christ to save us from our sins, life just isn’t fair!
The last few weeks, Marlin and I have been cooking a lot of barbecue, including a couple batches of smoked ribs, several turkeys, and grilled steak. Marlin even cold smoked some cheese on his TS60 BBQ Smoker.
So often when I sit down to enjoy some intensely amazing ribs or one of my brand new recipes, I can’t help but think, “My life just isn’t fair!” Really, which one of us deserves any of the blessings we have, let alone the wonderful enjoyment of cooking meat outdoors and eating it in all kinds of creative ways.
Here are some of the “unfair” blessings that have come my way recently. Hope you enjoy them.

Brother what’s not fair is drooling over your photo’s before i have to head out for the family gathering filled with over cooked turkey and lumpy mashed potatoes, thats not fair.

I’m smoking some chicken with some white sauce and two Boston butts. Just trying some different rubs and sauces for the shoulders. Experiminting with some Kansas City rubs and Carolina sauces . Do you have a favorite recipe I can try.

As for sauce, we usually use a premade sauce such as one of Meadow Creek’s tomato-based sauces. I really like their Hickory flavored sauce. We also really like Meadow Creek’s rub, but I am practicing with my own rubs too. Here is a simple BBQ rub recipe and some tips on making your own.

We used a Meadow Creek seasoning on the ribs and usually serve them without sauce. The only sauce in the pictures above is where you see a puddle of Meadow Creek Hickory sauce on my plate. We were eating left-over (reheated) ribs and I got the notion to sauce them up a little. Added a tremendous flavor.

Good evening Lavern, it is a please to here you are having a blessed day with family, as so am I. After serving most of my life down range in the military and missing all the holidays, I too enjoy the holidays now. I have been retired now for almost ten years and I count every day a blessing with them. I have noticed in your post you have stated “the amazing gift of Jesus Christ saving us from our sins” are you a Christian? Saved by His grace? I am! I am a follower of Christ and not ashamed of it either. I love your web site and visit it often, and get hungry every time too. I love to BBQ, smoke, and grill. In fact today we cooked some ribs and chicken on the grill. We will have turkey tomorrow over at my son and his wife’s house; he is on duty tonight (sheriff’s dept). It is always a blessing to be with family and to enjoy the freedoms we have in this country. I have been looking at the pics here and it looks as if you have put on a mighty big spread and the kids look as if they are enjoying the food too! Well thanks for your hard work on the web keeping us in smoking knowledge and in your endeavor to make a perfect grilling machine! There are very nice and wouldn’t mind one myself! Well you take care; enjoy the gift of life in Christ our Savior, and the blessing of your family. Oh, and that awesome looking food too!

Lavern How long do you smoke the cheeses? At what temp?

To smoke cheese, your temperature can’t go over 90 degrees F. It’s called cold smoking. The point is to put the cheese in the smoke for about 2-4 hours, depending on your taste and how much smoke you want. Then refrigerate it in zip-lock bags for at least 10 days. I’m getting ready to publish a guide on cold smoking cheese next week, and that will cover the details of cold smoking.

Great pics and must taste great looking at your kid’s smiles! In one pic your holding up a whole pork rib, over your smoker, and its bent around your hand like a horseshoe!! How long had the ribs cooked at that point?

Maybe about 5 hours, but time is not always an accurate gauge for smoked ribs. You want to cook them until they bend down like that at least to a 90 degree angle. And when you fold them, they should break at the bend.

Man that looks good. I didn’t get pictures of our last 2 cooking but we smoked 144 slabs of ribs and 70 chickens for the high school and middle school wrestling program and we also smoked 9 turkeys to feed the homeless in Huntsville Alabama for Thanksgiving. Hi Big guy I tried your grandma Dinner rolls and I must tell they were very good,and guess what your thanksgiving party almost look like mine, we had a great time with friends and loves ones it was fair.
